Paddington's favorite: Asian marmalade chicken wings

Even the marmalade loving Paddington bear would approve of these chicken wings! Crispy baked wings coated with a sauce full of irresistible soy sauce, garlic, and orangy flavors.

Ingredients

🐻For baking the chicken wings

  • 700 grams chicken wings/drumsticks about 13 pieces
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground black pepper

🐻For the sauce

  • 50 milliliters soy sauce
  • 3 tablespoons orange marmalade jam
  • 3 cloves minced garlic
  • 100 milliter cup chopped green onions

Instructions

  • Preheat oven to 230 degrees Celcius. 
  • Dry the chicken wings/drumsticks by using a paper towel, and put them into a large bowl. 
  • Add the baking powder and ground black pepper to the bowl with the chicken wings/drumsticks. 
  • Mix so that the chicken is evenly coated with the baking powder mixture. Note: works better to use your hands! 
  • Line a baking pan with aluminum foil and oil well so that it doesn't stick.  
  • Place the baking powder coated chicken onto the aluminum covered baking pan. Make sure to space them apart so they are not sticking. 
  • Lower heat to 220 Celcius and bake on middle rack for 30-40 minutes. Flip the chicken once after 15-20 minutes into the baking time.  
  • Take the chicken out of the oven and let it rest for about 5 minutes. 
  • While the chicken is resting, in a medium sized pot (The size of the pot should fit the chicken wings later) put the soy sauce, minced garlic, and marmalade. Heat on medium heat while stirring. Stop the heat as soon as the marmalade has melted into the soy sauce. Note: Don't let the sauce simmer or reduce! 
  • Once the chicken has rested for 5 minutes, place the chicken into the pot with the sauce. Add the chopped green onions and mix the chicken and sauce together. 
  • Put onto a plate! If you have left over chopped green onion, you can also put some on top to garnish.
